  • 1 cup + 2 tbsp boiling water
  • 6 tbsp unsalted butter, cut into cubes
  • 1 tsp salt
  • 3 ¾ cup all-purpose flour
  • 2 tbsp vegetable oil
  • 3 small yellow onions, diced
  • ½ red bell pepper, diced
  • ½ green bell pepper, diced
  • 1 clove garlic, minced
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • 1 lb (450g) ground beef, 80% lean
  • ½ cup tomato puree
  • 3 tsp sweet paprika
  • ¼ tsp chili powder
  • 1 tbsp dried oregano
  • 2 tsp dried garlic
  • 2 tsp dried parsley
  • 1 tsp granulated sugar
  • 4 green onions, chopped (green parts only)
  • 1 hard boiled egg, chopped
  • Vegetable oil for frying

Instructions

  1. Prepare the dough by combining boiling water, butter, and salt in a bowl. Gradually add flour and knead until smooth. Let it rest for 2 hours.
  2. For the filling, sauté onions and peppers until softened. Add garlic and ground beef; cook until browned. Stir in tomato puree and seasonings. Cool completely.
  3. Roll rested dough into disks. Place filling in the center of each disk and seal tightly.
  4. Heat oil in a pot to 350°F (175°C) and fry empanadas until golden brown.
