  • ¾ cup unsalted butter
  • ¾ cup sugar
  • ½ cup light brown sugar
  • 3 large eggs
  • 1½ tsp vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup cocoa powder
  • ¾ tsp salt
  • 6 oz semisweet chocolate (for ganache)
  • ¾ cup heavy whipping cream
  • Fleur de sel for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease a baking pan or line it with parchment paper.
  2. Melt semisweet chocolate and unsalted butter in a heatproof bowl until smooth. Let cool slightly.
  3. In another bowl, whisk together sugars and eggs; combine with the cooled chocolate mixture and add vanilla.
  4. In a separate bowl, mix flour, cocoa powder, and salt; fold into wet ingredients until just combined.
  5. Pour batter into the prepared pan and bake for approximately 30 minutes or until a toothpick comes out clean. Cool completely.
  6. For ganache, heat heavy cream until simmering; pour over chopped chocolate and stir until smooth.
  7. Cut brownies into squares and dip each into warm ganache. Place on a cooling rack to set.
  8. Sprinkle Fleur de sel over each petit four before serving.
