  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk
  • 1 cup pureed butternut squash
  • 1 ½ cups cheddar cheese
  • ½ cup Parmesan cheese
  • Salt and pepper, to taste
  • Optional: ½ cup breadcrumbs for topping

Instructions

  1. Cook elbow macaroni in salted boiling water until al dente. Drain and set aside.
  2. In a saucepan over medium heat, melt butter. Whisk in flour to create a roux and cook for about 1 minute.
  3. Gradually whisk in milk until smooth; continue cooking until slightly thickened.
  4. Stir in pureed butternut squash, cheddar, and Parmesan until melted.
  5. Toss cooked pasta into the cheese sauce until well coated, then transfer to a greased baking dish.
  6. If desired, sprinkle breadcrumbs on top. Bake at 375°F (190°C) for about 20 minutes or until golden brown.
