  • 2 large chicken breasts (halved lengthwise)
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 medium red onion (sliced)
  • 2 garlic cloves (minced)
  • 1 tablespoon lemon juice
  • Salt & pepper to taste

Instructions

  1. Pat chicken breasts dry and season generously with Cajun seasoning.
  2. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add chicken and cook for 4–5 minutes per side until golden brown and cooked through (165°F internal temperature). Transfer to a plate and tent with foil.
  3. In the same skillet, add remaining olive oil, sliced peppers, onion, and minced garlic. Sauté for 5–6 minutes until softened.
  4. Return chicken to the skillet, squeeze lemon juice over the top, and toss lightly with peppers.
  5. Garnish with fresh parsley before serving hot.
