  • 1 cup vital wheat gluten
  • ½ cup breadcrumbs (panko or homemade)
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 2 tablespoons fresh sage, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon fennel seeds
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • ½ cup vegetable broth

Instructions

  1. In a food processor, blend chickpeas with olive oil, soy sauce, maple syrup, garlic powder, smoked paprika, fennel seeds, black pepper, salt, and sage until slightly chunky.
  2. Transfer the mixture to a mixing bowl. Gradually add vital wheat gluten and breadcrumbs, stirring until well combined.
  3. With wet hands, shape the mixture into links approximately six inches long; you should yield about eight links.
  4. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and arrange sausage links on it.
  5. Bake for 30–35 minutes until firm and lightly browned.
