  • 5 tablespoons unsalted butter (divided)
  • 1/3 cup light brown sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. In a medium bowl, whisk together ricotta, milk, egg yolks, and vanilla until smooth.
  2. In another bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. Fold dry ingredients into the ricotta mixture until just combined.
  4. In a clean bowl, beat egg whites until soft peaks form; gently fold into batter along with melted butter.
  5. For the cinnamon swirl, mix melted butter, brown sugar, and cinnamon in a small bowl; transfer to a piping bag.
