  • 1/2 cup Brown Sugar, packed
  • 1/2 cup Unsalted Butter or Coconut Oil, softened
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Milk
  • 1 cup Vegan Marshmallows Fluff
  • 1/2 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract (for filling)
  • 1 cup Semi-Sweet Chocolate Chips
  • 1 tablespoon Coconut Oil

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. Cream together granulated sugar, brown sugar, and softened butteruntil light and fluffy.
  4. Beat in egg and vanilla extract until combined.
  5. Gradually add dry ingredients to wet mixture; mix until just combined. Add milk if dough is too dry.
  6. Drop rounded balls of dough onto the prepared baking sheet and bake for about 10 minutes; cool on wire rack.
  7. For the filling, mix vegan marshmallows fluff, powdered sugar, and vanilla extract until smooth.
  8. Once cooled, spread filling on half of the cookies and top with remaining cookies to form sandwiches.
  9. Melt chocolate chips with coconut oil in a microwave-safe bowl; dip each sandwich into melted chocolate until coated.
  10. Place back on parchment-lined sheets to let chocolate set completely.
