  • 2 ½ cups all-purpose flour
  • ½ cup sourdough starter (active and bubbly – optional)
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tbsp olive oil
  • ¾ cup warm water (adjust as needed)
  • 14 oz firm tofu (pressed)
  • 2 tbsp nutritional yeast
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • 1 tbsp olive oil
  • 1 small handful fresh basil leaves (finely chopped)
  • ½ cup sautéed mushrooms
  • ½ cup roasted red peppers (sliced)
  • 1 cup spinach (wilted and squeezed dry)
  • ¼ cup black olives (sliced)
  • ½ tsp crushed red pepper flakes (optional)
  • 1 tbsp vegan pesto or marinara (optional)
  • 1 tbsp olive oil
  • ½ tsp dried oregano
  • 1 tbsp sesame seeds or poppy seeds (optional)

Instructions

  1. In a large mixing bowl, combine the flour, sugar, salt, and sourdough starter if using.
  2. Gradually add warm water while mixing until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Place the dough in an oiled bowl, cover it with a kitchen towel, and let it rise for about 30 minutes.
  5. In another bowl, crumble the pressed tofu using your hands or a fork until it’s finely textured.
  6. Add nutritional yeast, lemon juice, garlic powder, onion powder, and salt. Mix well until combined.
  7. Preheat your oven to 400°F (200°C).
  8. Roll out the dough into a rectangle on a floured surface.
  9. Spread the tofu ricotta mixture evenly over the dough.
  10. Layer sautéed mushrooms, roasted red peppers, wilted spinach, black olives, crushed red pepper flakes (if using), vegan pesto or marinara (if using), olive oil drizzle, and dried oregano on top of the ricotta.
  11. Carefully roll the dough tightly from one end to form a log shape.
  12. Transfer to a lined baking sheet seam-side down.
  13. Brush with olive oil and sprinkle sesame seeds or poppy seeds if desired.
  14. Bake in preheated oven for about 30 minutes or until golden brown.
