  • 1/2 cup white apple vinegar (optional)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 can diced tomatoes (14.5 oz), drained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • Salt and freshly ground black pepper to taste
  • 1 cup freshly grated Parmesan cheese
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook rigatoni in salted boiling water until al dente; reserve 1 cup pasta water before draining.
  2. Brown the sausage in olive oil over medium-high heat, breaking it into chunks.
  3. Add onion and garlic; sauté until translucent.
  4. Deglaze with apple vinegar if using, then add tomatoes, oregano, and red pepper flakes; simmer.
  5. Stir in cream and chicken broth; simmer until thickened.
  6. Combine sauce with drained rigatoni, adding reserved pasta water as needed. Stir in half the Parmesan and garnish with herbs.
