  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 cups whole milk
  • ½ cup heavy cream
  • 4 large egg yolks
  • ½ cup granulated sugar
  • 3 tbsp cornstarch
  • 2 tsp vanilla extract (for custard)
  • 2 tbsp unsalted butter (for custard)
  • ½ cup granulated sugar (for sprinkling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Beat in eggs and vanilla until well combined.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt; gradually mix into the wet ingredients.
  4. Scoop out dough balls (about 2 tablespoons each), flatten them slightly, and place them on the prepared baking sheets. Bake for 10-12 minutes until lightly golden. Cool completely on wire racks.
  5. For the custard filling, heat milk and cream in a saucepan until steaming but not boiling. Whisk egg yolks with remaining sugar and cornstarch in another bowl until pale.
  6. Gradually mix the hot milk into the egg mixture while whisking constantly to prevent curdling. Return to saucepan and cook over medium heat until thickened.
  7. Stir in vanilla extract and butter; chill until set.
  8. Once cookies are cool and custard is set, spoon custard onto each cookie and sprinkle with sugar; caramelize using a kitchen torch or broiler.
