  • 1 cup active sourdough starter
  • ¾ cup warm water
  • 1½ teaspoons salt
  • 1½ teaspoons sugar or honey
  • 1½ tablespoons olive oil
  • 1 tablespoon dried Italian herbs
  • 45 cloves roasted garlic (mashed)

Instructions

  1. Ensure your sourdough starter is fed and bubbly.
  2. In a mixing bowl or stand mixer, combine bread flour, salt, sugar, Italian herbs, mashed roasted garlic, and olive oil.
  3. Gradually add warm water and sourdough starter until a shaggy dough forms.
  4. Knead the dough until smooth—8–10 minutes in a stand mixer or 10–12 minutes by hand.
  5. Allow the dough to rise in a greased bowl until doubled in size (about 2 hours).
  6. Shape the dough into a round loaf and let it rise again on a parchment-lined baking sheet for an hour.
  7. Preheat oven to 450°F (232°C). Brush loaf with olive oil and sprinkle with extra roasted garlic and flaky sea salt.
  8. Bake for 30–35 minutes until golden brown and hollow-sounding when tapped.
