  • ½ cup pineapple juice
  • ¼ cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • ½ teaspoon black pepper
  • 4 pineapple rings (fresh or canned)
  • 4 slices provolone or mozzarella cheese
  • 4 toasted brioche buns
  • Mayonnaise and BBQ sauce (or teriyaki sauce)

Instructions

  1. Marinate the chicken by mixing pineapple juice, soy sauce, brown sugar, olive oil, garlic, ginger, and black pepper in a bowl or zip-top bag. Add chicken and marinate for at least 1 hour.
