  • 200 g rolled oats (certified gluten-free if needed)
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 420 ml almond milk (or other non-dairy milk)
  • 2 large eggs
  • 80 ml pure maple syrup
  • 75 g freshly shredded carrots
  • 60 g chopped pecans (or other nuts)

Instructions

  1. Preheat your oven to 190°C and lightly grease a 20×20 cm baking dish.
  2. In a large bowl, mix rolled oats, baking powder, cinnamon, ginger, and sea salt until well combined.
  3. In another bowl, whisk together almond milk, eggs, maple syrup, and vanilla extract.
  4. Stir in shredded carrots along with half of the raisins and pecans into the wet mixture.
  5. Combine the wet mixture with dry ingredients until fully incorporated.
  6. Transfer to the prepared baking dish and press down gently.
  7. Top with remaining raisins and pecans; bake uncovered for 40–45 minutes or until golden brown.
  8. Allow to cool for about 5 minutes before serving.
