  • 1 pound turkey sausage links (sweet or spicy)
  • 3 tablespoons olive oil
  • 1 large yellow onion, sliced
  • 1 red bell pepper, sliced
  • 1/3 cup pure honey
  • 4 cloves garlic, minced
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • Salt and freshly ground black pepper

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together honey, garlic, soy sauce, vinegar, and red pepper flakes.
  3. Toss sweet potato cubes with olive oil, salt, and pepper; spread evenly on the baking sheet.
  4. Roast for 15 minutes until they begin to soften.
  5. While the sweet potatoes roast, heat remaining olive oil in a skillet over medium-high heat. Brown the turkey sausages on all sides for about 8–10 minutes; slice them into pieces.
  6. Combine the sausages, onions, and bell peppers with sweet potatoes on the baking sheet. Drizzle half of the glaze over everything and toss gently.
  7. Return to the oven for another 12–15 minutes until fork-tender. Drizzle with remaining glaze before serving.
