  • 2 tablespoons granulated sugar
  • ½ teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs, beaten
  • 1 teaspoon vanilla extract
  • ⅔ cup buttermilk
  • 2 large Honeycrisp apples, peeled and diced
  • Oil for frying
  • 2 ¼ cups powdered sugar
  • ⅛ teaspoon kosher salt
  • 1 tablespoon pure maple syrup
  • 34 tablespoons milk

Instructions

  1. In a large bowl, whisk together flour, baking powder, sugar, salt, and cinnamon.
  2. In another bowl, mix beaten eggs with vanilla extract and buttermilk until smooth.
  3. Combine wet ingredients into dry ingredients gently; fold in diced Honeycrisp apples.
  4. Heat oil in a medium pot to 360°F.
  5. Drop spoonfuls of batter into hot oil and fry for about 3–4 minutes on each side until golden brown.
  6. Drain excess oil on paper towels.
  7. For the glaze, whisk powdered sugar with maple syrup and milk until smooth; drizzle over warm fritters.
