Ingredients

Scale
  • 2 ripe pears, peeled and diced
  • 1 cup fresh cranberries, halved (or dried cranberries)
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted (or plant-based alternative)
  • 1 cup buttermilk
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup all-purpose flour (for streusel)
  • 1/4 cup brown sugar (for streusel)
  • 1/4 cup rolled oats (for streusel)
  • 1/4 cup cold butter, cubed (or plant-based alternative, for streusel)
  • 1 teaspoon cinnamon (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with paper liners.
  2. In one mixing bowl, whisk together flour, baking powder, baking soda, and salt until well combined.
  3. In another bowl, mix melted butter with sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in buttermilk until fully incorporated.
  4. Gently fold in diced pears and cranberries into the wet mixture.
  5. Combine the wet ingredients with the dry ingredients, stirring gently until just mixed—do not overmix.
  6. For the streusel topping, mix flour, brown sugar, oats, cinnamon, and cubed butter in a separate bowl until crumbly.
  7. Fill muffin tins about two-thirds full with batter and sprinkle streusel topping on top.
  8. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  9. Cool in the pan for 5 minutes before transferring to wire racks.
