  • 3 cloves garlic, minced
  • 1 (15-ounce) can pure pumpkin puree
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (14.5-ounce) can diced tomatoes with juice
  • 2 cups beef or chicken broth
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cinnamon
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper (optional)
  • 1½ teaspoons salt (plus more to taste)
  • ½ teaspoon black pepper

Instructions

  1. If serving in a pumpkin, slice off the top and scoop out the seeds.
  2. In a large pot over medium heat, warm the olive oil. Add ground beef or turkey; cook until browned.
  3. Add onion and bell pepper; sauté for about 4–5 minutes until softened. Stir in garlic and cook for an additional minute.
  4. Mix in pumpkin puree, kidney beans, black beans, diced tomatoes, and tomato paste.
  5. Pour in broth and add chili powder, cumin, smoked paprika, cinnamon, oregano, cayenne (if desired), salt, and black pepper. Stir to combine.
  6. Bring to a boil; reduce heat and simmer uncovered for 30–40 minutes until thickened.
  7. Taste and adjust seasonings as needed before serving hot.
