  • 1 can (28 oz) diced tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic; sauté until softened.
  2. Add ground beef and cook until browned, breaking it apart as it cooks.
  3. Stir in pumpkin puree, black beans, kidney beans, diced tomatoes, chili powder, cumin, salt, and pepper until well combined.
  4. Reduce heat to low and let simmer for about 30 minutes, stirring occasionally.
