  • 0.5 cup granulated sugar
  • 0.5 cup packed brown sugar
  • 1 cup canned pumpkin puree
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.25 cup granulated sugar (for cinnamon swirl)
  • 2 teaspoons ground cinnamon (for cinnamon swirl)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a bowl, whisk together flour, baking soda, salt, and spices; set aside.
  3. In another bowl, mix sugars, pumpkin puree, vegetable oil, eggs, and vanilla until smooth.
  4. Gradually combine dry ingredients with wet until just mixed.
  5. For the swirl, mix sugar and cinnamon in a small bowl.
  6. Layer half the batter in the pan, sprinkle half the cinnamon mixture, add remaining batter, and top with remaining swirl mixture. Gently swirl with a knife.
  7. Bake for about 60 minutes or until a toothpick comes out clean.
  8. Cool for 10 minutes before transferring to a rack.
