  • 1 (12–14-ounce) loaf French bread, brioche, sourdough bread, or challah
  • 1 cup pumpkin puree
  • 3/4 cup packed light or dark brown sugar
  • 2 and 1/2 teaspoons pumpkin pie spice
  • 6 large eggs
  • 2 and 1/3 cups whole milk
  • 2 teaspoons pure vanilla extract
  • 1/3 cup packed light brown sugar (for topping)
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 6 Tablespoons unsalted butter, cold and cubed
  • 3/4 cup roughly chopped pecans
  • Pure maple syrup for serving

Instructions

  1. Slice and cut the bread into 1-inch cubes. Let the cubed bread sit out uncovered for a few hours or up to 1 day.
  2. Grease a 9×13-inch baking dish or spray with nonstick spray. Spread cubes of bread evenly in the dish.
  3. In a large bowl, whisk together pumpkin puree, brown sugar, pumpkin pie spice, eggs, milk, and vanilla extract until well combined. Pour this mixture evenly over the cubed bread.
  4. Cover the pan tightly and place it in the refrigerator for at least 3 hours or up to 1 day.
  5. In another bowl, mix brown sugar, flour, and cinnamon together. Add cold butter; using a pastry cutter or fork, blend until pea-sized crumbles form. Stir in chopped pecans and refrigerate until ready for use.
  6. Remove casserole from refrigerator. Preheat oven to 350°F (177°C).
  7. Sprinkle crumb topping evenly over casserole. Bake uncovered for 20 minutes, then cover with aluminum foil and bake an additional 25–35 minutes until center is set.
  8. Once baked, remove from oven and cool for about 5 minutes before serving. Drizzle with maple syrup on top if desired.
