  • 12 flour tortillas (8-inch)
  • 1 cup granulated sugar
  • 2 tsp ground cinnamon
  • ⅔ cup melted butter
  • 8 oz cream cheese
  • ½ cup powdered sugar
  • 1 ½ cups canned pumpkin puree
  • 1 tsp vanilla extract
  • 1 Tbsp pumpkin pie spice
  • Pinch of sea salt
  • 1 cup heavy whipping cream

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut tortillas into circles and brush each with melted butter.
  3. Coat the circles in cinnamon sugar and fold over a baking rack or muffin tin.
  4. Bake for 6–8 minutes until golden and crisp; cool completely before filling.
  5. In a large bowl, beat cream cheese until smooth, then mix in powdered sugar, pumpkin puree, vanilla extract, pumpkin pie spice, and sea salt until creamy.
  6. Chill the filling for 15–20 minutes.
  7. Whip heavy cream with powdered sugar until soft peaks form.
  8. Fill each taco shell with pumpkin filling and top with whipped cream and desired toppings.
