  • 1/2 cup ricotta cheese
  • 2 cups all-purpose flour
  • 2 large eggs
  • 4 tablespoons unsalted butter
  • Fresh sage leaves
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • Salt and black pepper, to taste
  • 1/2 teaspoon salt (for pasta)
  • 12 tablespoons water, as needed

Instructions

  1. To make the filling, combine pumpkin purée, ricotta cheese, grated Parmesan, nutmeg, cinnamon, salt, and pepper in a bowl until smooth.
  2. For the dough, create a well with flour on a clean surface, add eggs and salt, then mix and knead into a smooth dough. Let it rest for 20 minutes.
  3. Roll out the dough thinly and cut into desired shapes for ravioli. Place spoonfuls of filling on one piece of dough, cover with another piece, and seal edges firmly.
  4. Boil salted water and cook ravioli in batches until they float (about 3–4 minutes).
  5. Meanwhile, melt butter in a skillet with sage leaves until fragrant. Toss cooked ravioli in the sauce before serving.
