  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • ¼ tsp nutmeg
  • ¼ tsp ground cloves
  • ⅛ tsp ground black pepper
  • 150 g unsalted butter
  • 220 g icing sugar
  • orange food color (optional)
  • pumpkin seeds (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine white granulated sugar, brown sugar, and vegetable oil until smooth. Mix in eggs one at a time, then add vanilla extract and pumpkin puree.
  3. In another bowl, whisk together flour, baking powder, baking soda, and spices.
  4. Gradually blend dry ingredients into the wet mixture until just combined.
  5. Grease two 9-inch round cake pans and evenly distribute the batter. Bake for about 60 minutes or until a toothpick comes out clean. Let cool completely.
  6. For the frosting, beat unsalted butter until creamy; gradually mix in brown sugar and cream cheese until smooth. Add icing sugar as needed.
  7. Frost cooled cake layers generously and garnish with pumpkin seeds if desired.
