  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp garlic powder
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/2 cup milk (any kind)
  • 1/4 cup olive oil or melted butter
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp chopped fresh chives

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with parchment liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, pepper, and garlic powder.
  3. In another bowl, mix the pumpkin puree, eggs, milk, and olive oil until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined; small lumps are fine.
  5. Fold in the shredded cheddar cheese and chives.
  6. Divide the batter among the muffin cups, filling each about three-quarters full.
  7. Bake for 18-22 minutes until golden brown and a toothpick comes out clean.
  8. Allow to cool in the pan for 5 minutes before transferring to a wire rack.
