  • 1 lb carrots, peeled and cut into thick rounds
  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil the carrot rounds in salted water for about 10–12 minutes until fork-tender. Drain and allow to cool slightly.
  3. Drizzle the boiled carrots with olive oil and season with garlic powder, smoked paprika, salt, black pepper, and sprinkle grated Parmesan.
  4. Roast the carrots on the prepared baking sheet for 20–25 minutes, flipping halfway through until golden brown.
  5. Smash each carrot round gently using the bottom of a glass or measuring cup, then garnish with fresh parsley before serving hot.
