  • 2 cups cooked sweet potato, mashed
  • 1 1/2 to 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg (optional)
  • 1 egg, lightly beaten
  • 4 tablespoons unsalted butter
  • Fresh sage leaves
  • Salt and black pepper, to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Bake the sweet potatoes until tender, about 45 minutes. Once cooled slightly, mash until smooth.
  2. In a large bowl, combine mashed sweet potatoes, salt, nutmeg (if using), and the lightly beaten egg. Gradually mix in flour until a soft dough forms.
  3. On a floured surface, divide the dough into four portions. Roll each into ropes about 1/2-inch thick and cut into 1-inch pieces. Press each piece with a fork to form ridges.
  4. Boil salted water in a large pot. Cook gnocchi in batches for 2–3 minutes or until they float.
  5. In a skillet over medium heat, melt butter and add sage leaves until fragrant. Toss cooked gnocchi in the sage butter until well coated.
  6. Serve immediately topped with grated Parmesan.
