  • 4 (8-inch) flour tortillas
  • ½ cup shredded mozzarella cheese
  • 1 cup pizza sauce
  • 6 oz sliced turkey turkey pepperoni
  • 1 teaspoon Italian seasoning
  • 1 tablespoon butter or olive oil (optional)

Instructions

  1. In a skillet over medium heat, cook the turkey turkey pepperoni slices until edges curl and crisp (about 1–2 minutes per side). Drain on paper towels.
  2. Brush one side of each tortilla lightly with butter or olive oil.
  3. On the un-buttered side, spread ¼ cup pizza sauce, sprinkle ¼ cup shredded mozzarella cheese, add 6 slices of turkey turkey pepperoni, and a pinch of Italian seasoning. Top with another tortilla (buttered side facing out).
  4. Heat a skillet over medium heat and carefully place each assembled quesadilla in it. Cook for 2–3 minutes per side until golden brown and cheese is melted.
  5. Transfer to a cutting board, let rest briefly, then slice into wedges. Serve warm with extra pizza sauce or ranch dressing if desired.
