  • 1 cup shelled pistachios, unsalted
  • 1 ½ cups unsweetened almond milk (or oat milk)
  • ½ cup coconut cream
  • ¼ cup cornstarch
  • ½ cup granulated sugar
  • ¼ teaspoon turmeric (optional, for natural green color)
  • Pinch of salt
  • ½ cup powdered sugar (for dusting)
  • Crushed pistachios (optional garnish)

Instructions

  1. In a bowl, mix flour, sugar, yeast, and salt. Add warm almond milk, melted vegan butter, and vanilla. Stir until a dough forms.
  2. Knead dough on a floured surface for about 6–8 minutes until smooth. Let it rise in a greased bowl for 1–1½ hours until doubled.
  3. Roll out dough to ½-inch thick and cut into circles. Allow to rise again for 30–40 minutes.
  4. Fry in oil at 350°F for about 1–2 minutes per side or bake at 375°F for 12–14 minutes.
  5. For the filling, blend pistachios with almond milk until smooth; cook with remaining ingredients until thickened.
  6. Fill cooled donuts with pistachio cream and dust with powdered sugar.
